The smoking of food as a means of preservation is probably one of the earliest methods observed and learnt by Stoneage people. It happened naturally after the discovery of fire because - as we all know - there is no smoke without fire
Little has changed since those early days - in the smoking of food area - but just because it is simple it doesn't mean it isn't delicious
Equipment can be a pre-existing pan or wok, there are indoor smoking kits available should you get bitten by the bug and you can easily make outdoor smoking chambers of all sorts of designs
Our Workshops are friendly, no experience of cooking or preserving is necessary and we try to use everyday, familiar equipment. You can cook along with the Live Workshop or use the recording which will be place in The Library of the School soon after the Workshop finishes
