If you find some delicious beetroot at a Summer market - buy up a quantity
We are going to pickle some beetroot in balsamic vinegar which will create a marriage of the dark, sweet beets with the mysterious balsamic vinegar - no harsh flavours to disturb the palette. A few spices, a bay leaf or two and time to mature
That's not all though, there is plenty of preserving to do with beetroot without repeating yourself and I prefer my beets un-pickled. This is just personal taste but I love to simply pressure can them in water. They can then be roasted along with other vegetables as a Winter dish.
Used in smoothies to provide the vital anti-oxidants, vitamins and minerals and that amazing colour!
